{One Pot} Spinach & Tomato Pasta Toss

Ingredients

  • 1 14.5 oz Italian style diced tomatoes (with juice)
  • 2 cups pasta choose multi-grain to make even healthier
  • 1 cup water
  • 6 oz baby spinach leaves
  • 1.5 cups shredded colby jack cheese or mozzarella cheese use your favoite

Instructions

  • Bring water, tomatoes ad pasta to a boil in a large pan. Stir and cover.
  • Simmer on medium low heat until pasta is tender (apprx 10 min)
  • Add half spinach, simmer covered for 2 minutes or until wilted. Continue with other half of spinach.
  • Top with cheese and serve

Notes

add 1/2 pound sausage if desired
