Healthy Bacon Wrapped Meatloaf

Equipment

  • 1 broiler pan

Ingredients

Meatloaf

  • 1 C almond milk
  • 6 slices Ezekiel bread or other low-carb bread
  • 2 pounds ground beef
  • 1 C Parmesan cheese
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • Freshly ground black pepper
  • 1/4 C parsley minced, fresh or dried
  • 8 slices bacon

Tomato Sauce Topping

  • 1 ½ C sugar-free ketchup
  • 6 Tbsp brown sugar subsitute I use Swerve
  • 1 tsp mustard

Instructions

  • Preheat oven to 350°
  • Pour the almond milk over the bread and allow it to soak for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan cheese, salt, garlic powder, black pepper, and parsley in a large mixing bowl. Stir in the eggs.
  • With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on the broiler pan, which will allow the fat from the meat to drain. Make sure to line the bottom of the broiler pan with foil to make clean-up easier!
  • Lay the bacon slices over the top of the loaf, tucking them underneath the meatloaf.
  • Make the tomato sauce topping by stirring the ingredients together in a small bowl. Pour the topping over the loaf.
  • Bake for 1 hour.
