Sugar Free Scotcharoo Bites

Ingredients

  • 1/4 C butter room temperature
  • 1/3 C natural peanut butter
  • 1/3 C Gentle Sweet (Truvia, Swerve, or Pyure) powdered in your food processor
  • 2/3 C peanut flour
  • 1-2 splashes MCT or canola oil
  • 1/2 C sugar free chocolate chips
  • 1/4 C sugar free butterscotch chips

Instructions

  • Mix the first five ingredients together in a stand mixer using a paddle. A hand mixer or food processor works great, too.
  • Scoop into balls and roll with your hands to make smooth.
  • Melt the chocolate chips and butterscotch chips in the microwave (just pop into the same bowl) in 30 minute increments, stirring after each 30 seconds. Be very careful not to scorch the chocolate.
  • Dip the peanut butter balls in melted chocolate mixture and place on a wax paper or parchment paper covered tray. Store in freezer until ready to eat.

Notes

I buy Gentle Sweet and Peanut Flour at Trim Healthy Mama. 
It is important to powder your sugar substitute or else you will have gritty treats. All you need to do it to place it in the food processor and pulse a few times.
