Sugar Free (Healthy) Orange Chicken

Ingredients

  • 2.5 lbs boneless chicken breast or thighs cut into bite-sized pieces
  • 1/2 C soy sauce
  • 2 cloves garlic minced
  • 4 t THM Super Sweet Blend or sugar-alternative of your choice
  • 3 T rice vinegar
  • 4 T water
  • 1/2 t crushed red pepper flakes
  • 2 T sesame oil
  • 2 t orange extract
  • 1/2 t glucamannon
  • 1/2 t sesame seeds

Instructions

  • Mix all the sauce ingredients except the glucomannan in a medium saucepan, and bring to a simmer. Sprinkle in the glucomannan while whisking vigorously to almost the desired thickness. The sauce will thicken as it simmer.
  • Cook the chicken. Heat the oil in a large skillet over medium heat and add the chicken pieces. You may need to cook it in two batches, so make sure to divide the coconut oil appropriately. Cook the chicken, turning once to cook evenly on both sides, for approximately 10 minutes, or until cooked through.
  • Pour the sauce over the chicken and allow to simmer for a few minutes. Sprinkle with sesame seed, if desired.
  • Serve with steamed broccoli or on a bed of shredded cabbage.
