Sugar Free Ginger Cookies

This is a Trim Healthy Mama S recipe adapted from Trim Healthy Future

Ingredients

  • 1 C Baking Blend or use half almond flour, half coconut flour
  • ¾ C Swerve or use your favorite sweetener
  • ¼ C oat fiber
  • T ground ginger
  • ½ t cloves
  • 1 t ground cinnamon
  • ½ t salt
  • ½ t glucamannon (optional)
  • 2 t baking soda
  • 1 egg
  • 1 T molasses
  • ½ C unflavored coconut oil or butter at room temperature

Instructions

  • Preheat the oven to 350°. Spray 1 large cookie sheet.
  • Mix everything together and then spoon walnut sized balls onto the sheet. I use a cookie scoop. Make a criss-cross pattern on each cookie with a fork.
  • Bake for 8-10 minutes.
