Keto Asian Salad

Ingredients

  • For the salad:
  • 1/2 head of cabbage shredded
  • 1/2 C of sliced almonds
  • 1/2 C cilantro chopped
  • 2 C cooked chicken breast shredded
  • 2 T sesame seeds
  • For the dressing:
  • 1/2 C all-natural no sugar added peanut butter
  • 3 drops liquid stevia or Splenda
  • 1/4 C unsweetened almond milk
  • 2 t toasted sesame oil
  • 2 T rice vinegar
  • 2 T apple cider vinegar
  • 3 T soy sauce
  • 1/2 t salt
  • 1 t ground ginger
  • 1/4 t sriracha sauce optional

Instructions

  • Make the dressing in a small bowl by whisking together all of the dressing ingredients.
  • In a large bowl, toss all of the salad ingredients and the dressing ingredients together.
  • Garnish with extra cilantro and a little extra sriracha is you like spicy food. :)
