Texas Cowboy Cookies

Ingredients

  • 3 cups flour
  • 1 Tbs baking powder
  • 1 Tbs baking soda
  • 1 Tbs ground cinnamon
  • 1 tsp salt
  • 1 1/2 cups unsalted butter room temperature
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed brown sugar
  • 3 eggs
  • 1 Tbs vanilla extract
  • 3 cups chocolate chips milk or semi sweet, personal preference
  • 3 cups old fashioned rolled oats
  • 2 cups sweetened flake coconut
  • 1 cup chopped pecans optional

Instructions

  • Heat oven to 350 degrees
  • Mix flour, baking soda, baking powder, cinnamon and salt in a bowl and set aside
  • In a large bowl or electric mixer beat butter until smooth and creamy. Slowly beat in sugars to combine.
  • Add eggs one at a time while beating. Add in vanilla and mix well.
  • Mix in flour mixture until just combined.
  • Mix in chocolate chips, oats, coconuts and pecans
  • Drop cookies in heaping tablespoons onto nonstick baking sheet or baking sheet lined with parchment paper.
  • bake 8-10 minutes until edges slightly browned and still doughy in center.
  • Remove and allow to cool on baking sheet apprx 3 minutes then transfer to a cooling rack.
  • Enjoy!
