Low-Carb, Keto, Breakfast Omelet

Ingredients

  • 2 eggs
  • 1 oz cream cheese cut into pieces
  • 1 oz cheddar jalapeno, or pepperjack cheese, cut into pieces

Instructions

  • Spray a micro-wave safe cereal bowl with non-stick spray.
  • Crack two eggs into the bowl, and whisk with a fork.
  • Add cheeses.
  • Microwave 1 minutes. Stir to blend egg and cheese.
  • Microwave 1 more minute, or until it puffs up, sort of like a souffle.
  • Add variety to this recipe by adding bacon bits, cooked sausage, ham pieces, and different flavors of cheese.
