Sugar Free Apple Crumble

This is a Trim Healthy Mama E Recipe that is wonderful for people with diabetes.

Ingredients

  • 3 apples peeled and thinly sliced
  • 1 t cinnamon
  • 1/2 t pumpkin pie spice
  • 3 T sugar alternative Gentle Sweet, Swerve, or Truvia
  • 1/2 C water
  • 1/2 t glucomannan
  • 1/2 C granola homemade or store-bought
  • sugar free vanilla ice cream homemade or store-bought

Instructions

  • Pre-heat oven to 300°. Spray at 9 x 9 baking dish with non-stick spray.
  • In a medium size bowl, stir together the apples, spices, and sugar alternative of your choice (my favorite is Gentle Sweet from Trim Healthy Mama).
  • In a small bowl, mix the water and glucomannan together with a fork until dissolved. Add this mixture to the apple mixture.
  • Place apple mixture in the prepared pan and bake for about one hour, or until apples are soft.
  • Remove apples from oven, raise heat to 400°, and sprinkle granola over the top. Return to oven and bake for 15 minutes, or until granola is warm and crunchy.

Notes

I use my homemade cinnamon maple granola for the topping on this crumble, and its delicious. If you'd rather grab some granola at the store, look for a maple or cinnamon flavor and try to find one that has no added sugar.
