Sea Salt Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 c. unsalted butter at room temperature
  • 1 c. brown sugar packed
  • 1/2 c. white sugar
  • 1 T. vanilla extract
  • 2 large eggs
  • 1 t. baking soda
  • 1 t. fine sea salt
  • 3 c. old fashioned oats
  • 1 1/2 c. + 1 t. all-purpose flour
  • 1 1/2 c. semi-sweet chocolate chips

Instructions

  • In a large bow, add the butter, brown sugar, and white sugar. Beat until smooth and creamy about 2-3 minutes. Add the eggs and vanilla extract and beat until combined.
  • On top of the wet ingredients, add the baking soda, salt, and old fashioned oats. Beat to combine. Then add the flour until just combined. Carefully fold in 1 c. of chocolate chips.
  • Cover and chill for about 1 hour. Preheat oven to 350 degrees. Roll cookie dough into balls. Bake for about 11 minutes
  • Let the cookies stand on the cookie sheet for several minutes before transferring to a wire rack. Take the reserved chocolate chips and press into the tops of cookies. Then sprinkle a tiny dash of sea salt on top
