Preheat the oven to 350 degrees. Over low-medium heat add olive oil to frying pan. Add the olive oil and kale. Saute for about 3 minutes until kale is wilted. Using a non-stick skillet or a pie dish, lightly spray with cooking oil. Place the kale in the bottom of the pie dish. Followed by the crumbled feta.
In a medium bowl, whisk together the eggs, milk, and Parmesan. Season lightly with salt and pepper. Add in the green onion. Pour the egg mixture over the kale. Top with shredded mozzarella cheese.
Bake the crustless quiche for about 45-55 minutes. or until the top is golden brown. Let cool for several minutes before cutting into slices.
