One Pot Beef & Barley Soup

Ingredients

  • 2 t. butter
  • 2 T. olive oil
  • 1 1/2 lbs. stew meat cubes
  • 1 onion finely chopped
  • 2 T. garlic
  • salt
  • pepper
  • 1 T. Italian seasoning
  • 1/2 c. tomato sauce
  • 2 T. tomato paste
  • 8 c. beef broth
  • 2-3 potatoes - diced peeled, chopped
  • 3 stalks celery sliced
  • 3 carrots peeled, sliced
  • 1/2 c. barley
  • 1/2 c. corn
  • 1/2 c. peas
  • 1 t. dried parsley

Instructions

  • Heat butter and oil in a large pot over medium heat.
  • Add meat and cook until golden brown.
  • Then saute onion, garlic, salt, pepper, and Italian seasoning until fragrant.
  • Add tomato sauce, tomato paste, and beef broth.
  • Cover and cook for 25 minutes.
  • Mix in potatoes, celery, carrots, barley.
  • Cook and cover for 25 minutes.
  • Add corn and peas.
  • Cover and cook for another 10 minutes.
  • Then, cook uncovered for a few more minutes on high heat to reduce liquid until soup thickens to desired consistency.
  • Garnish with parsley, and serve wtih warm bread.
