Ingredients

  • 4 Chicken Skewers (cooked, or grilled)
  • For the Satay Sauce:
  • 3 T. smooth peanut butter
  • 1 T. dark soy sauce
  • 1/2 t. chili flakes red pepper; as desired
  • 7 oz. coconut milk
  • 1 T. light brown sugar
  • 1/2 t. ground cilantro
  • Garnish with:
  • 2 T. freshly chopped cilantro
  • 1/2 t. chili flakes
  • 1/4 red onion thinly sliced
  • 1 T. peanuts - roughly chopped
  • 1 t. sesame seeds
  • juice from 1 lime

Instructions

  • While meat is cooking, place all of the satay sauce ingredients except the lime juice into a small pan. Heat over medium heat while stirring with a wooden spoon. Then, as it comes close to boiling, it will start to thicken. Don't let it boil, and turn down the heat. Once thickened, remove from heat, and add lime juice.
  • Place cooked chicken skewers on a plate, then add the satay sauce either in a small bowl or drizzle on top of chicken. Garnish with cilantro, chili flakes, red onion, peanuts, and sesame seeds.
