A delicious 3-layer, colorful salad, changing up the colors depending on the occasion; i.e. Christmas red and green; spring and Easter, yellow and green

Ingredients
  • 1st layer:
  • 1 small package lime jello
  • 1 C hot water
  • 1 C cold water
  • 2nd layer:
  • ½ C hot water
  • ½ pkg lemon jello
  • ¼ C small marshmallows
  • ⅓ pineapple juice
  • 1-4 oz. pkg cream cheese
  • 1 10-13 oz can crushed pineapple
  • /2 C whipped cream
  • 1/c mayonnaise
  • 3rd layer:
  • 1 pkg lemon jello
  • 1 c hot water
  • 1 c cold water
Instructions
  1. layer one: dissolve jello in water and pour into 9x13" pan. Refrigerate until set.
  2. layer two: In saucepan over medium heat, dissolve jello in hot water. Add marshmallow. Stir to melt. Remove from heat. Add pineapple juice(drained from crushed pineapple) and cream cheese. Beat until well blended. (Will have small chunks). Cool. Fold in pineapple, whipped cream and mayonnaise. Refrigerate until thickened. Pour over 1st layer, gently spreading out to form 2nd layer. Refrigerate until set. 3rd layer: Dissolve lemon jello in hot water. Add cold water, mix and refrigerate until heavy syrup consistency. Pour over 2nd layer and refrigerate.
  3. Options: Cut in squares or spoon up the servings.
  4. Garnish with a dollop of whipped cream and leaf of mint.
