Peach Blackberry Cobbler

Ingredients
  • ¼ c. unsalted butter, softened
  • 1 c. sugar ( divided)
  • ¾ c. flour
  • 1½ t. baking powder
  • ½ t. - ¾ t. salt
  • ⅓ c milk
  • ¼ c boiling water ( over batter)
  • For the fruit:
  • 1 pint blackberries
  • 4-5 peaches - pitted, and thinly sliced
  • squeeze lemon juice
  • dash almond extract
Instructions
  1. Grease a 9 inch square pan. Line with foil. Preheat the oven to 350 degrees.
  2. In a medium bowl, combine peaches, blackberries, ¼ c. sugar, lemon juice, and almond extract. Set aside. Beat together softened butter and sugar until light and fluffy. Add flour, baking powder, and salt until crumbly. Slowly pour in milk and stir until incorporated then beat until batter is smooth. Place fruit mixture at the bottom of the pan. Spread the batter evenly over the fruit. Sprinkle with remaining ¼ c. sugar. Pour ¼ c. water over all then place in the oven and bake for 40- 50 minutes or until golden brown.
  3. Cool for 15 minutes before serving.
