Southern Fried Chicken For the 4th?

A wonderful and delicious entree no matter what time of year it is prepared.

Ingredients
  • 2 lbs of chicken. Today I used drumsticks.
  • ½ C vegetable oil (or a combination oil with a little olive oil)
  • 1 C buttermilk
  • 1½ C flour
  • 1 t seasoned salt
  • 1 t salt
  • 1 t pepper
Instructions
  1. Place oil in large skillet on medium high heat. Place buttermilk in one bowl and flour, and seasoned salt in another bowl.
  2. Pat off excess liquid from chicken and place one piece at a time in the buttermilk then roll in flour. Carefully place each piece in oil and fry to a medium golden brown. Turn and brown other side. Turn burner down to medium and continue to cook for approximately forty five minutes to an hour. To ensure doneness, slice open a piece near the bone and make sure there is no pink coloring on the meat or bone.
