Mini Strawberry Pies

Ingredients
  • (1) 3 oz box strawberry jell-o
  • 1 cup water
  • ¾ cup Sugar
  • 2 Tbs cornstarch
  • 4 cups strawberries, diced or sliced
  • 12 mini graham cracker crusts (store bought)
  • Cool Whip
Instructions
  1. Whisk together water, sugar and cornstarch. Bring to a boil over medium high heat. Reduce heat and simmer 1-2 minutes
  2. Stir in jell-o until dissolved. Let mixture cool 5-10 minutes
  3. Spoon strawberries into the mini grapham cracker crusts. Pour jell-o mixture slowly over the tops of pie. Be sure not to overfill
  4. Refrigerate utnil set. Top with cool whip and enjoy
