Carrot Cake Trifle

Ingredients
  • 1 box of carrot cake mix and required ingredients for cake mix.
  • 1 carrot, shredded (optional)
  • 8 oz softened cream cheese
  • 1.5 sticks of softened butter
  • 3.5 cups powdered sugar
  • 1 Tbs vanilla
  • 16 oz cool whip
Instructions
  1. Bake cake mix as instructed on box in a 9x13" pan (mix in optional shredded carrot to mix if desired to make more authentic) allow to cool and break into small cubes.
  2. In a separate bowl using an electric mixer cream together cream cheese and butter until light and fluffy. Apprx 3-5 minutes, be sure to scrape the sides as mixing.
  3. Run mixer on low speed and mix in powdered sugar ½ cup at a time until combined well.
  4. Pour in Vanilla and continue to mix for an additional 3 minutes as it begins to fluff.
  5. With mixer still on low, slowly add in the cool whip a little ad a time until well combined.
  6. In a trifle bow or deep glass bowl, place one layer of carrot cake pieces/crumble. Then layer with whipped cream cheese frosting. Repeat ending with the whipped cream frosting on top.
  7. Top cake with desired topping (strawberry covered carrots, plain or even crushed pecans)
