Creamy Tuscan Tortellini & Chicken Soup

Ingredients
  • 2 Tbs butter
  • 1 small white onion, diced
  • 3 cloves garlic, minced
  • 28 oz diced tomatoes
  • 1 (15oz) can great northern beans, drained and rinsed
  • 4 cups chicken broth
  • ¼ cup grated parmesan cheese
  • 1 Tbs Italian seasoning
  • ¾ tsp salt
  • ¼ tsp pepper
  • 1 cup heavy cream
  • 2 cups cooked and shredded chicken (rotisserie is great)
  • 9 oz tortellini
Instructions
  1. In large pot over medium heat, melt the butter. Add onion and garlic and sauté until tender and fragrant.
  2. Add diced tomatoes, beans, chicken broth, parmesan cheese, Italian seasoning, salt and pepper and heavy cream. Stir well and bring to a simmer.
  3. Add in diced chicken and tortellini continue to simmer additional 10-15 minutes until tortellini is cooked. Enjoy!
