Fresh Greek Salad

Ingredients
  • 1 lb ripe tomatoes diced
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 medium cucumber, diced
  • ½ cup pitted Kalamata olives
  • 2 oz crumbled feta cheese
  • 1 cup plain croutons
  • Dressing:
  • 2 Tbs red wine vinegar
  • 2 Tbs extra virgin olive oil
  • ¼ tsp dried oregano
  • ⅛ tsp sea salt
  • ⅛ tsp black pepper
Instructions
  1. In a large bowl mix tomatoes, red pepper, green pepper, cucumbers and olives.
  2. In separate bowl whisk dressing ingredients (red wine vinegar, olive oil, oregano, salt and pepper) together.
  3. Drizzle over salad and mix gently. Let stand at room temperature for 20 minutes to allow flavors to blend or store in refrigerator for a few hours until ready to serve.
  4. Right before serving sprinkle with feta cheese and croutons.
  5. Serve and enjoy!
