Roasted Garlic Potatoes

Ingredients
  • 1½ lbs red skinned potatoes, quartered
  • ¼ c. olive oil
  • ½ t. kosher salt
  • ½ t. ground black pepper
  • 1 T. minced garlic (1-2 cloves)
  • 1 T. minced parsley
Instructions
  1. Preheat oven to 400 degrees
  2. Cut the potatoes into quarters, and place in a bowl with olive oil, salt, pepper, and garlic; toss until the potatoes are well coated (often times I use my hands to mix).
  3. Dump potatoes onto a baking sheet lined with aluminum foil. Spread out into one layer.
  4. Roast in the oven for 45 minutes to 1 hour. Flip 1-2 times to ensure even browning.
  5. Remove potatoes and toss with parsley.
