Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil, stirring constantly with wooden spoon. Lower the heat and add the almonds. Cook and stir the mixture until the liquid completely evaporates and leaves a crystal-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds. Allow nuts to cool, about 15 minutes package in airtight container as desired.

Option: Make with only almonds for a candied almond recipe.
Substitute stevia for sugar for sugar-free option.
