Ingredients
  • ⅓ cup melted coconut oil
  • ½ cup honey
  • 2 eggs
  • 3 ripe bananas mashed
  • ¼ cup milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • 1¾ cups whole wheat flour
Instructions
  1. Preheat oven to 325 degrees
  2. Grease a 9x5" loaf pan
  3. In a large bowl mix together coconut oil and honey with a whisk, add in eggs and beat well.
  4. Mix in bananas and milk.
  5. Add in baking soda, vanilla, salt and cinnamon and whisk to blend well
  6. Stir in flour until combined.
  7. Pour batter into greased loaf pan.
  8. Bake for approx. 55 minutes or until toothpick inserted in center comes out clean.
  9. Allow bread to cool before removing from pan.
Notes
If coconut oil solidifies while mixing in ingredients, just set aside in a warm location (like on top of your stove) and allow to melt again
