Healthy Banana Bread
- ⅓ cup melted coconut oil
- ½ cup honey
- 2 eggs
- 3 ripe bananas mashed
- ¼ cup milk
- 1 tsp baking soda
- 1 tsp vanilla extract
- ½ tsp salt
- ¼ tsp ground cinnamon
- 1¾ cups whole wheat flour
- Preheat oven to 325 degrees
- Grease a 9x5" loaf pan
- In a large bowl mix together coconut oil and honey with a whisk, add in eggs and beat well.
- Mix in bananas and milk.
- Add in baking soda, vanilla, salt and cinnamon and whisk to blend well
- Stir in flour until combined.
- Pour batter into greased loaf pan.
- Bake for approx. 55 minutes or until toothpick inserted in center comes out clean.
- Allow bread to cool before removing from pan.
If coconut oil solidifies while mixing in ingredients, just set aside in a warm location (like on top of your stove) and allow to melt again
