{5 Ingredient} Simple Beef Enchiladas

Ingredients
  • 2 pounds ground beef, browned
  • 10 flour tortillas
  • 2 C shredded cheddar cheese
  • 20 oz enchilada sauce (we use mild, but any heat variety works)
  • ¼ cilantro, chopped
Instructions
  1. Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray.
  2. Add 1 C cheddar cheese and ½ of the enchilada sauce to the ground beef.
  3. Fill each tortilla with about ¼ C of ground beef mixture, roll tortilla, and place seam down in a 9 x 13 baking dish.
  4. Pour the remainder of the enchilada sauce and then sprinkle the remaining cheese over the tortillas.
  5. Bake for 20-30 minutes or until the cheese is melted and bubbly.
  6. Sprinkle with the chopped cilantro right before serving.
Notes
We love to eat our with some sliced avocados and refried beans.
