Ingredients
1 - ¼ c. (dry) oatmeal
⅔ c. coconut flakes
½ c. peanut butter
½ c. ground flax seed
½ c. chocolate chips
⅓ c. honey
1. T chia seeds (optional)
1 t. vanilla extract
Instructions
Mix all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
Once chilled, roll into balls - about 1½" in diameter. Store in airtight container and keep refrigerated for up to 1 week.
