Ingredients
  • 1 - ¼ c. (dry) oatmeal
  • ⅔ c. coconut flakes
  • ½ c. peanut butter
  • ½ c. ground flax seed
  • ½ c. chocolate chips
  • ⅓ c. honey
  • 1. T chia seeds (optional)
  • 1 t. vanilla extract
Instructions
  1. Mix all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
  2. Once chilled, roll into balls - about 1½" in diameter. Store in airtight container and keep refrigerated for up to 1 week.
