Starting with a package of Ramen noodles, this recipe is simple and scrumptious.

Ingredients
1 package chicken flavored Ramen noodles
1 T peanut butter
½ t ground ginger
1 T Siracha (add more if you want more spice)
1 T fresh cilantro, chopped
Optional add-in ingredients:
chicken, cooked and cubed
pea pods
steamed broccoli
scallions, chopped
peanuts
Instructions
Prepare the Ramen according to package directions. Add the flavoring packet as well.
While the Ramen in cooking, mix the peanut butter, ginger, Siracha, and cilantro together in a soup bowl.
When Ramen is cooked and ready to serve, remove about 2 tablespoons of the broth and add to the peanut sauce in the soup bowl to thin a bit. Stir until combined.
Add the remaining broth and noddles and any mix-in ingredients of your choice. Top with more fresh cilantro and Siracha.
Notes
I use all natural, sugar-free peanut butter which doesn't make this dish sweet
