Thumbprint Cookies (Pecan Fingers)

Ingredients
  • Thumbprint cookies:
  • 1 C soft butter
  • ¼ c. powdered sugar
  • 1 t. vanilla
  • 1 T. water
  • 2 C. flour
  • ¼ t. salt
  • 2 C. chopped pecans
  • Decorator's Frosting:
  • ½ C. Crisco
  • 4 C. powdered sugar
  • ½ t. salt
  • 1 t. vanilla extract
  • 3-5 T. milk
  • ½ t. -1 t. almond extract
Instructions
  1. Cream together butter, powdered sugar, vanilla, and water. Then mix in flour and salt. Chill for 1 hour. Roll into small balls (like walnuts). Make indentation with index or little finger. Bake 1 hour at 250 degrees. Cool. Frost center by piping with decorator bag, using frosting recipe.
  2. Pretty at Christmas with red and green food coloring.
  3. For the Frosting: Mix Crisco, powdered sugar, vanilla (and salt if desired). Gradually add in milk to desired thickness. Then add almond extract. Add food coloring of choice.
