Ingredients
  • 1 cup flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • ½ to 1 teaspoon cinnamon (depending on how much you want)
  • 1 egg, beaten
  • ½ cup plus 1 tablespoon milk
  • 1 ½ cups (about 3) apples, peeled and diced
  • oil for frying
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons milk (or more to desired consistency)
Instructions
  1. FOR THE FRITTERS:
  2. Heat oil in a deep frying pan over medium high heat.
  3. Mix all dry ingredients together in a bowl with a wire whisk.
  4. Add egg and milk to the dry ingredients and mix well. Add apples to the batter and blend well. Drop by spoonfuls into hot oil and fry until dark golden brown, about two minutes per side. Once done frying, let cool on paper towels.
  5. FOR THE GLAZE:
  6. Mix the powdered sugar, vanilla, and milk together until desired consistency is acquired, adding more powdered sugar or milk if need be.
  7. Dunk in glaze covering fritters liberally.
  8. Place fritters on a wire wrack with a cookie sheet underneath, for easy cleanup. Makes 12 small fritters.
