Peanut Butter Oatmeal Cookies

Serves: 2 doz
- 1 cup peanut butter
- 1 cup butter, softened
- 1 cup packed brown sugar
- ¾ cup sugar
- 1 tsp vanilla
- 2 eggs
- 1½ cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1 cup quick cooking oats
- Preheat oven to 350 degrees
- In a large bowl (or mixer) mix peanut butter, sugars and butter until smooth
- Add vanilla and then beat in the eggs one at a time until blended
- In separate bowl combine flour, baking soda and salt and add to peanut butter mixture
- Stir in oats until just combined
- Drop by teaspoons onto ungreased cookie sheet.
- Bake 12-15 minutes or until lightly brown around edges
Once baked and cooled can be stored in an air-tight freezer container. (I actually prefer them out of the freezer...yum!)
