Casseroled Steak with vegetables

Ingredients
  • 2-T olive or canola oil
  • 1½ minute steak or round steak (cut into inch strips)
  • ½ flour
  • ¼ t. salt
  • ¼ t. pepper
  • ½ onion, sliced
  • ½ green pepper, sliced
  • 1 - 1½ c. water
  • 3 - 4 potatoes, peeled and halved
  • 3 - 4 carrots, peeled and halved
  • ½ head cabbage cut in wedges (optional)
  • 1 can cream of mushroom soup
Instructions
  1. Heat large skillet with ¼ cup of oil to medium high.
  2. Dredge steak in flour, then brown on both sides.
  3. Drain excess grease.
  4. Add onion, green pepper, and water.
  5. Bake 1 - 1½ hour at 300 degrees - covered.
  6. Then add potatoes, carrots, cabbage, cream of mushroom soup, and more water (if needed).
  7. Return to oven for 1 - 2 hours more.
  8. Remove from oven.
  9. Let cool about 5 - 10 minutes before serving.
