Perfect Mexican Rice

Ingredients
  • 2 C instant rice
  • ⅓ C oil
  • 1 8 oz can tomato sauce
  • 1 t salt
  • 1 t minced garlic
  • 4 C water
  • 1 t chicken bouillon
  • ¼ t cumin
  • ¼ t garlic powder
Instructions
  1. Heat oil in large frying pan on medium heat.
  2. Add rice and cook until golden brown, about 5 minutes.
  3. Add the chicken bouillon to the 4 cups of water and microwave for 3 minutes.
  4. When the rice is golden brown, add the water/bouillon, tomato sauce, salt, garlic, cumin, and garlic powder to the pan.
  5. Stir and cover the pan. Let simmer for 20-30 minutes or rice is tender and the liquid has been absorbed. Fluff with a fork.
  6. Sprinkle finely chopped cilantro on top just before serving.
