Candy Chocolate Chip Bars

Ingredients
  • 1½ c. all purpose flour
  • ¾ t. baking soda
  • ¼ t. salt
  • 1 c. old fashioned oats
  • ½ c. butter, softened
  • ⅓ c. creamy peanut butter
  • ½ c. light brown sugar
  • 1 t. vanilla extract
  • 1 egg
  • 1 egg yolk
  • ½ c. candy corn & fall colored m&m's, slightly chopped
  • ½ c. semi-sweet chocolate chips
  • ¼ c. fall sprinkles
Instructions
  1. Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking pan with cooking spray and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and oats.
  3. In a large bowl, cream together the butter, peanut butter, and sugars until fluffy and light in color - about 2-3 minutes.
  4. Add in the vanilla, egg and egg yolk. Mix together well.
  5. Add in dry ingredients - then add candy corn, m&m's, chocolate chips, sprinkles, and mix until just combined.
  6. Press the batter into the prepared pan. Spinkle any additional sprinkles on top and gently press down.
  7. Bake for 16-18 minutes until lightly browned on the edges. The bars will still look pale. Don't over bake or the bars will be too dry. Remove the pan to a cooling rack and let the bars cool in the pan before cutting into squares.
