Preheat oven to 250 degrees. Line a baking sheet with parchment paper and set aside
In a large bowl mix together sugar, cinnamon and salt, set aside
in separate bowl mix together egg whites, water and vanilla. Slowly stir in pecans until well coated. With a slotted spoon remove the pecans in place in the cinnamon sugar mix and gently stir until evenly coated.
Spoon pecans onto parchment lined baking sheet in a single even layer. Bake for 1 hour at 250 degrees stirring and shaking pan every 15 minutes.
