Pizza Bites (adapted from Two Peas and Their Pod)

Ingredients
  • 12 frozen rolls or 1 1lb. pizza dough
  • 1 c. mozzarella cheese
  • 24 pepperoni slices, quartered
  • 4 T. unsalted butter
  • 1 garlic clove, minced
  • ¼ t. dried basil
  • ⅛ t. dried oregano
  • ¼ t. dried parsley
  • pinch of salt
  • crushed red pepper (if desired)
  • 4 T. grated Parmesan cheese
  • 1 c. pizza sauce or marinara sauce (for serving)
Instructions
  1. Allow frozen rolls to come to room temperature by following instructions on bag.
  2. Preheat oven to 400 degrees F. Grease a 9 inch round baking pan with cooking spray and set aside.
  3. On a lightly floured surface, roll the rolls out into small rectangles. Place about 2 teaspoons of shredded mozzarella cheese on each rectangle. Top with pepperoni slices.
  4. Carefully take the ends of the rectangle and roll them around the toppings, pinching the ends to make a ball. Place the balls in the prepared pie pan.
  5. In a small saucepan, melt the butter and cook the garlic for 1-2 minutes over the medium-low heat. Remove from heat and stir in dried basil, oregano, parsley, and a pinch of salt. Brush the rolls with the garlic butter, reserving half of the mixture for later.
  6. Bake for 15 minutes or until tops are golden. Remove pan from oven and brush with more garlic butter. Sprinkle rolls with Parmesan cheese.
  7. Serve the rolls warm with pizza sauce or marinara sauce.
