In a large bowl, combine potatoes, carrots, onion, red pepper, and ground beef. Mix together. Then add seasoning salt, salt, and pepper.
Preheat grill to medium-high heat.
Tear off 4-6 sheets of aluminum foil. Spoon mixture onto each sheet. Add ½ T. butter to each. Wrap carefully in foil. Then wrap with additional foil layer. Cook for about 20 mins, or until meat is no longer pink, and vegetables are tender.
Sprinkle with cheese after cooking.
