Ingredients
  • 4 eggs
  • 1⅔c. sugar
  • 1 c. oil
  • 15 oz. pumpkin
  • 2 c. sifted flour
  • 2t. baking powder
  • 2 t. cinnamon
  • 1 t. salt
  • 1 t. soda
  • For frosting:
  • 4 oz. cream cheese
  • ½ stick of butter, softened
  • 1 t. vanilla
  • 2 T. milk
  • 3-4c. powdered sugar
Instructions
  1. Grease 13 x 10 pan.
  2. Bake 350 degrees for 30 min.
  3. Combine on medium speed eggs, sugar, oil, and pumpkin. Stir flour, baking powder, cinnamon, salt, and soda.
  4. Add remaining dry ingredients to pumpkin.
  5. Mix until smooth at low speed.
  6. Spread in 13 x 10 pan and bake.
  7. Cool on wire rack.
  8. For the frosting, combine cream cheese and butter in medium bowl with mixer. Add sugar, milk, and vanilla on low. Frost over cooled bars.
