{Slow Cooker} Chicken Fajita Soup

Ingredients
  • 1 whole boneless, skinless chicken breast (apprx 1lb)
  • 2 cans condensed cream of chicken soup
  • 1 cup salsa
  • 1.5 cups frozen corn
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • 1.5 cups water
  • 1.5 cups shredded cheddar cheese or Mexican blend cheese
  • optional toppings:
  • sour cream
  • diced tomatoes
  • cilantro
  • onion
  • diced avocado
  • tortilla chips
  • shredded cheese
Instructions
  1. Spray slow cooker with cooking spray and add chicken to the bottom of slow cooker
  2. Mix together cream of chicken soup, salsa, corn, beans, water and cumin. Pour over top of chicken.
  3. Cook on low 4-6 hours. Remove chicken and shred. Place back in slow cooker and add 1.5 cups cheese
  4. Continue cooking on low for approx. 20 minutes until cheese melted
  5. Serve with desired additional toppings
