Mediterranean Quinoa Salad with Olive Dressing

Ingredients
  • 1 cup Quinoa, uncooked
  • 2 cups, cauliflower, chopped
  • ½ cup Kalamata olives, chopped
  • 3 Tbs lemon juice
  • 3 Tbs olive oil
  • 1 clove garlic, minced
  • 4 cups spring mix lettuce, torn
  • 4 celery stalks, diced
  • 6 oz feta cheese
Instructions
  1. Cook 1 cup of uncooked quinoa according to package directions.
  2. Finely chop your cauliflower in a food processor (apprx 4 pulses)
  3. For olive dressing: stir together olives, lemon juice, olive oil and garlic.
  4. Drain any excess water from quinoa and stir in cauliflower.
  5. Arrange quinoa mix, spring mix, celery and cheese onto a platter or individual plates
  6. Serve with olive dressing.
