Crock Pot Pork Chalupa

Ingredients
  • 1 15 oz can pinto beans, drained
  • 1 pork shoulder or pork butt roast (3-5 pounds)
  • 3 C water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 3 oz can of diced jalapeƱos (omit if you don't like spicy)
  • 1 t salt
  • 2 T chili powder
  • 1 T cumin
  • 2 t oregano (Mexican oregano if you have it)
  • pepper to taste
  • tortilla chips for serving
  • Topping ideas:
  • shredded cheddar cheese
  • shredded lettuce
  • sour cream
  • chopped cilantro
  • chopped tomatoes
  • salsa
  • lime wedges
  • guacamole
Instructions
  1. Put all ingredients in slow cooker or dutch oven.
  2. Cover and simmer (on low) at least 5 hours, or until the roast falls apart.
  3. Uncover and cook about ½ hour, or until broth is reduced as much as you like.
  4. Serve over chips and top with preferred toppings.
Notes
Can also serve this over cooked rice or quinoa.
