Crock Pot Pork Chalupa

Serves: 8 servings
- 1 15 oz can pinto beans, drained
- 1 pork shoulder or pork butt roast (3-5 pounds)
- 3 C water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 3 oz can of diced jalapeƱos (omit if you don't like spicy)
- 1 t salt
- 2 T chili powder
- 1 T cumin
- 2 t oregano (Mexican oregano if you have it)
- pepper to taste
- tortilla chips for serving
- Topping ideas:
- shredded cheddar cheese
- shredded lettuce
- sour cream
- chopped cilantro
- chopped tomatoes
- salsa
- lime wedges
- guacamole
- Put all ingredients in slow cooker or dutch oven.
- Cover and simmer (on low) at least 5 hours, or until the roast falls apart.
- Uncover and cook about ½ hour, or until broth is reduced as much as you like.
- Serve over chips and top with preferred toppings.
Can also serve this over cooked rice or quinoa.
