Delicious chocolate on the outside; melt in your mouth peanut buttery sweetness with a little crunch on the inside. You'll love'em!

Recipe type: Dessert
Cuisine: American
Serves: 2 dozen
Ingredients
  • For filling, cream together:
  • ½ C butter
  • 1 lb powdered sugar
  • 2 C creamy peanut butter (I use Jiff)
  • Add:
  • 3 C Rice Krispies (I use only name brand as I've tried generic and it doesn't work as well, trust me!)
  • Chill; however, if this mixture sticks together well, skip the chilling.
  • Chocolate mixture to rolls balls in:
  • 2 C semi-sweet chocolate chips
  • ⅓ stick of paraffin
Instructions
  1. Roll filling into balls the size of walnuts, or a bit smaller.
  2. Chocolate mixture:
  3. I have melted the chocolate chips and paraffin 3 ways:
  4. By microwave---at 20 second intervals
  5. In a saucepan on low heat.
  6. In a double boiler (or my own double boiler contraption of a bowl of chocolate into a saucepan of hot water.
  7. All three work wonderfully--whatever your preference.
  8. If the chocolate mixture hardens before you're finished, microwave a bit. Sometimes I've added a little more paraffin, which makes it all the more shiny and tempting to eat. :)
  9. Dip balls with a spoon or fork into chocolate mixture. Place on waxed paper to dry.
  10. Refrigerate
  11. Enjoy!
