Oatmeal Cake (W/ apples)

A decadent rich buttery cake, especially good in the fall when the apples are ripe off the tree.

Ingredients
  • 1½ C boiling water
  • 1 C oatmeal
  • 1 stick butter
  • 2 eggs
  • 1 C brown sugar
  • 1 C sugar
  • 1⅓  C flour
  • 1 t soda
  • 1 t nutmeg
  • ¼ t salt
  • (1 apple and ½ C raisins, ¾ t cinnamon if desired)
  • For frosting:
  • 6 T soft butter
  • ½ C brown sugar
  • 1 C coconut
  • ½ C chopped nuts (I prefer black walnuts or pecans)
  • ¼ C evaporated milk
  • ½ t vanilla
Instructions
  1. For Cake:
  2. Place oatmeal and butter in large mixing bowl and pour boiling water over it. Cover and let stand 20 min. Add eggs and remaining ingredients. Pour into greased 9x13 baking pan. Bake 35-40 minutes or until middle is done. Cool slightly.
  3. Variation: Line pan with a cored and sliced apple. Add ½ C raisins. Perfect!
  4. For Frosting:
  5. Mix all together in mixing bowl. Spread over slightly warm cake. Broil until golden brown, approximately 3-4 min.
  6. I love serving this cake with vanilla or butter pecan ice cream and just a bit of caramel sauce drizzled over the top.
