Martha's Banana Nut Bread

A delicious, moist bread fit for every day clear to impressing "special" company. You'll love it, too! After all, it is Martha's recipe

Ingredients
  • 3 C flour
  • 1 t soda
  • ¾ t salt
  • 3 eggs
  • 2 C sugar
  • 1⅓ C vegetable oil (I use Canola)
  • 1 T vanilla
  • 1½ C mashed bananas (about 3)
  • 1 C walnuts or pecans (I always use black)
  • 1 C shredded coconut
  • ½ C buttermilk
Instructions
  1. Place flour, soda and salt in a bowl and stir together.
  2. Mix together eggs, sugar and oil. Mix in (with mixer on low) vanilla, bananas, walnuts, coconut and buttermilk.
  3. Place in 2 greased loaf pans. Bake 60-65 min. Cool 15 min. Run knife around entire loaf before inverting onto rack. Makes 2 loaves.
