Martha's Banana Nut Bread

Serves: 2 loaves
- 3 C flour
- 1 t soda
- ¾ t salt
- 3 eggs
- 2 C sugar
- 1⅓ C vegetable oil (I use Canola)
- 1 T vanilla
- 1½ C mashed bananas (about 3)
- 1 C walnuts or pecans (I always use black)
- 1 C shredded coconut
- ½ C buttermilk
- Place flour, soda and salt in a bowl and stir together.
- Mix together eggs, sugar and oil. Mix in (with mixer on low) vanilla, bananas, walnuts, coconut and buttermilk.
- Place in 2 greased loaf pans. Bake 60-65 min. Cool 15 min. Run knife around entire loaf before inverting onto rack. Makes 2 loaves.
