Thai Chicken Salad Sandwich Melts

Ingredients
  • 1 loaf good French bread, sliced
  • 1 large chicken breast, chopped finely
  • ¾ cup of Mayonnaise
  • 1 large tomato, diced
  • 8 oz mild cheddar cheese
  • ⅓ bunch of cilantro, chopped
  • Siracha sauce to taste
  • ¾ Tbs Sea Salt
  • ¾ Tbs Paprika
  • ¾ tsp ground pepper
  • ¾ tsp garlic powder
Instructions
  1. Preheat oven to 350 degrees
  2. Mix seasonings (salt, paprika, pepper and garlic powder) in separate bowl and set aside.
  3. Combine chicken and mayonnaise
  4. To taste add seasoning mixture above - begin with ½ tsp at a time, mix well
  5. Add chopped tomato and ½ chopped cilantro and cheddar cheese, stir to combine
  6. Add Siracha sauce to taste. (I mix a little in and then drizzle on top for added flavor)
  7. Spread mixture generously over sliced bread and bake uncovered on baking sheet at 350 degrees for approximately 8 minutes.
  8. Garnish with remaining cilantro and siracha sauce
