These are easy, satisfying, and full of protein. Make them in a big batch and then separate into zip lock bags for a quick, take-along snack.
- Candied Nuts
- Servings: Approximately 12-15
- 1 ¼ C water
- 2 ½ C white sugar
- 2 T and 1 ½ t of cinnamon
- 3 C whole almonds
- 2 C whole pecans
- Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil, stirring constantly with wooden spoon. Lower the heat and add the almonds. Cook and stir the mixture until the liquid completely evaporates and leaves a crystal-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds. Allow nuts to cool, about 15 minutes package in airtight container as desired.
Substitute stevia for sugar for sugar-free option.
