A little something healthy to eat while having a fun-filled evening with my niece, Ava.
- 1 can black beans drained
- 1 can diced or stewed tomatoes
- 2 C cooked brown rice
- 1 8 oz bag of shredded Mozzarella or Cheddar
- 1 bag of spinach flour tortillas.
- Mix first 3 ingredients together in large bowl. Spread on tortilla shell. Add cheese on top and wrap it up.
- Serve hot or cold.
- Optional: May add a small can of green chilies and taco seasoning for some spice
